I love weekend breakfasts. I have my favourite weekend breakfasts, but I have come to realise my partner has different favourites. This is one of them. A friend of ours has an unassuming cafe that serves great Italian food. This dish came from one of his. The key, of course, is great ingredients. Choose your favourite Italian style sausage (I used Balzanelli’s Italian Chilli Sausages) pick up a loaf of good Italian style or sourdough bread and always use free-range eggs. I imagine there are many other men in the world who would like this just as much.

|1||tablespoon||shaved parmesan cheese|
|2||free range eggs|
|2||slices||good Italian or sourdough bread|
|1||teaspoon||chopped fresh parsley|
|good quality olive oil|
|salt and pepper|
Chop the sausage. Add a little olive oil to a small fry pan. Once the pan is hot, add sausage pieces and fry until they start to turn golden. Break the eggs into the pan, and cover the pan with a lid till eggs are nearly cooked to your liking. Sprinkle over shaved parmesan cheese, grind over black pepper and salt to taste. Return the lid, to soften the cheese. Remove from heat. Sprinkle over parsley. Toast bread. Top the toast with the egg and sausage. Pour over a little very good olive oil.
