Green vegetable tart

green vegetable tart

There were some wonderful green things at market on Saturday. The broccoli looked beautiful. I bought a bunch of basil to make a lovely Tuscan bread and tomato salad early in the week. The idea was forming in my mind. I have some kale in the fridge, and when I called in at Choku Bai Jo, they had lovely bunch of organic garlic chives and green chillis. The decision was made. I was going to make a lovely green tart of vegetable goodness.

Serves 4-6

2 tablespoons Fresh parsley
2 tablespoons Fresh basil
2 tablespoons Garlic chives
1/2 Green chilli
100 grams Kale
100 grams broccoli
1/2 bunch asparagus
100 grams green beans
2 tablespoons chickpea flour
3 eggs
3 tablespoons cream
1/2 teaspoon sea salt
1/2 teaspoon freshly ground pepperberries (substitute red pepper, or black pepper)
