Blueberry and banana super muesli with vanilla yoghurt

I love the banana blueberry flavour combination, There are some incredible blueberries at market at the moment, from Clyde River. I seem to be going through a muesli phase. Being so sick this year has really made me reconsider superfoods for optimal nutritional value. I suffer neurological symptoms, so I figure omega 3, aka brain food would be highly beneficial for me. It was for this reason I bought myself a bag of Chia seeds on the weekend. I know they are also a very good source of dietary fibre and other things. This muesli brings together the Chia seeds, and cocao nibs another superfood, with honey toasted oats and almonds. I topped it with a vanilla yoghurt and fresh blueberries and banana. Now that’s what I call a breakfast with optimal nutritional value! It was delicious to boot.

Serves 2

3/4 cup oats
1 tablespoon flaked almonds
2 teaspoons honey
2 teaspoons chia seeds
1 teaspoon cocao nibs
3 tablespoons active yoghurt
1/8 teaspoon vanilla paste
1 banana, sliced
2 generous handfuls blueberries

Preheat the oven to 140oC. Scatter the oats and almonds on a lined baking tray and drizzle with honey. Bake in a preheated oven till golden, stirring regularly throughout. This may take about 15 minutes. Remove from the oven, stir through the cocoa nibs and chia seeds. Leave to cool completely.

Combine the vanilla paste and yoghurt, mixing till thoroughly.

Divide the muesli between your serving bowls. Arrange the slices of banana on top, then dollop on the yoghurt. Pile a handful of blueberries on each bowl and serve.
