Homemade (Macadamia) Ferrero Rochers

I made these for Mother’s Day. It took some figuring out, but I’m very glad with the result. They were amazing. It’s a bit of a fiddle, but the effort will be worth the result if you want to impress someone special. The important thing you’ll need is an appropriate mould for the wafer cups. I used an oven proof silicone chocolate mould. I’m very strict about using only fair trade chocolate. This will of course be an obvious improvement on the original Ferrero Rocher and seems only appropriate for a Mother’s Day gift; fairtrade certification requires gender equity for cocoa farmers, and protects against child labour. The other twist in these chocolates is the use of macadamia’s, Australia’s own nut.

Makes 16

Wafer biscuit cups

10 grams butter, softened
2 tablespoons caster sugar
1 teaspoon vanilla extract
1 egg white
2 tablespoons flour


100 grams fair trade milk chocolate
2 tablespoons macadamia butter
8 macadamia nuts, halved


50 grams fair trade milk chocolate
2 tablespoons finely chopped macadamia nuts

To make the wafer cups, preheat the oven to 180oC. Beat the butter, sugar and vanilla together till light and fluffy. Beat in the egg white, mixing well, till smooth. Beat through the flour until well combined. Brush the inside of the moulds with just enough biscuit mix to coat them. Bake for ten to fifteen minutes, until golden brown. Allow the biscuits to cool slightly before popping them out of the mould. Repeat this process until you have at least 32 biscuit cups.

To make the ganache, melt the chocolate in a bowl set above boiling water and stir through the macadamia butter. Mix till well combined.

To assemble, dip a macadamia half in the ganache and arrange it snugly in a biscuit cup. Fill another biscuit cup with ganache and sandwich the two cups together to form a sphere. Set aside to set. Repeat until you have at least 16 spheres.

To coat, melt the chocolate in a bowl set above boiling water. Dip a sphere into the chocolate, then roll in finely chopped macadamias, rolling between your hands so it’s thoroughly coated.

If you’d like, arrange the chocolates in small gold paper paddy cases, pack in a clear plastic gift box, tie with brown ribbon and finish with a gold gift label to match the colour scheme of the original Ferrero Rocher.
