Ham soup with vegetables, lentils and other beans

You have to love those dishes when you can just throw some very simple ingredients in a pot and come back to a scrumptious, hearty, tasty meal. This is one of those dishes. I had a pork hock from Boxgum Grazing in the fridge and wanted to use some lentils I had in the cupboard. Then I realised I also had some dried four bean mix that could be used. You know how it goes. It certainly made for a lovely wintery warming dish. I recommend you give it a try.

Serves 4

2 onions, diced
2 cloves garlic, crushed
2 carrots, diced
2 stalks celery, diced
1 bay leaf
1 pork hock
1 cup Persian red lentils
1/2 cup dried four bean mix

Combine all ingredients in a slow cooker. Fill the cooker with water. Cover and cook on high for eight or more hours.

Gently remove the hock from the slow cooker being careful to get all bits of bone. Discard the bone and skin. Break up the meat and return to the soup.
