Grown up cookies (with whiskey and dark chocolate)

These cookies are all grown up. Flavoured with Scotch whiskey and dark chocolate with 70% cocoa solids, oats expand on the Scottish theme and walnuts add some grown up crunch.

Makes about 24 cookies

125 grams buttter
3/4 cups brown sugar
1 tablepsoon vanilla sugar
1 tablespoon Scotch whiskey
1 1/4 cup self raising flour
1/4 cup oats
60 grams Green & Black’s Fair Trade 70% chocolate
60 grams fresh walnuts

Preheat the oven to 180oC.

Finely slice the chocolate so you have slivers of chocolate. Roughly chop the walnuts.

Cream the butter and sugars until light and fluffy. Add the whiskey and combine.

Stir in the flour, then add the oats, chocolate slivers and chopped walnuts.

Line an oven tray with baking paper. Scoop the cookie dough in tablespoon sized dollops onto the tray, allowing room for the cookies to spread to double their size.

Bake for about 15 minutes, or until they are just golden on the bottom.

Allow them to cool on the tray for a few minutes before transferring to a wire rack to cool completely.
