Rhubarb crumble

I saw the most beautiful bunches of rhubarb for sale at Windellama Organics at the Capital Region Farmers Market on the weekend. I simply had to buy one for use In my belated Father’s Day celebrations. I decided to make a crumble. The colour that came out in the crumble was sensational, and the flavour was superb. Next time you see some lovely rhubarb, give this recipe a shot.

Serves 3-4

orange, zest only

vanilla sugar

Grand Marnier

grams

butter

1/3

cup

brown sugar

2/3

cup

plain flour

1/4

cup

flaked almonds, crushed

Preheat the oven to 180oC.

Wash the rhubarb and chop into pieces one or two centimetres long. Arrange the rhubarb in your baking dish. Add the finely grated orange zest, vanilla sugar and Grand Marnier and mix.

To make the crumble, place the butter, sugar, flour and almonds in a mixing bowl. Using your hands, rub the butter into the flour/sugar mix until you have a crumble mix that includes large lumps.

Tip the crumble mix over the rhubarb and bake for 30 minutes, or until golden on top. Serve with good quality vanilla ice cream.
